Full malolactic fermentation to create great suppleness, texture and complexity - I really love the distinctive cashew, nougat character that it brings to the wine.

Elements of our sauvignon blanc, with definite hints of delicious nougat, crème caramel and cashew from the malolactic fermentation (in other words, from the softening of the natural acid).
- Style
Full malolactic fermentation in seasoned French oak (9 months).
- Colour
Bright, pale straw with green tints.
- Bouquet
Complex - hints of passionfruit but as Rob says, if he hadn't made the wine himself, he may not recognise it as being from the sauvignon blanc fruit otherwise.
- Palate
Elements of our sauvignon blanc, with definite hints of delicious nougat, crème caramel and cashew from the malolactic fermentation (in other words, from the softening of the natural acid).
- Peak Drinking / Cellaring Potential
This will surprisingly cellar for years and will become that much more complex, butterscotchy and lush, with that signature softness and dry finish.

Asian cuisine (with subtle chilli only - generally no chilli with wine!), shellfish, light Italian.
