Full malolactic fermentation; 10 months in seasoned French oak.
- Tasting Notes
Delicious. Soft juice fermented down to bone dry in tank and transferred to seasoned French oak for a 10 month period. Full malolactic fermentation (softening of the natural acid) provides both a nougat, crème caramel and nutty character, and at the same time a supple viscosity and complexity. Elegant and subtle.
